Ingredients
  

Shrimp
  • 1 pound raw shrimp peeled and deveined
Marinade
  • 1/2 cup fresh lime juice
  • 2 medium jalapeños sliced
  • 1 clove garlic minced
  • 1 teaspoon salt
Vegetables
  • 1 medium cucumber sliced
  • 1 medium red onion thinly sliced
  • 1/2 cup cilantro chopped
Garnish
  • 1 medium avocado sliced
  • 1 cup tortilla chips

Method
 

Prepare the Marinade
  1. In a mixing bowl, combine lime juice, sliced jalapeños, minced garlic, and salt.
Marinate the Shrimp
  1. Add the raw shrimp to the marinade and mix well. Let it marinate for about 15 minutes until the shrimp turn opaque.
Add Vegetables
  1. Once the shrimp is marinated, add sliced cucumber, red onion, and chopped cilantro to the bowl. Mix gently.
Serve
  1. Transfer the aguachile to a serving dish and garnish with sliced avocado and tortilla chips.

Notes

Aguachile is best served fresh and can be adjusted in spiciness by adding more or fewer jalapeños.
