Ingredients
  

  • 2 cups fresh cranberries (220g)
  • 1 cup granulated sugar (200g)
  • 2 cups diced apples (300g)
  • 1 tsp ground cinnamon
  • 1 tbsp freshly grated ginger
  • 1 baguette sliced into thin pieces
  • 3 tbsp olive oil

Method
 

  1. Rinse cranberries and remove any bad ones. Peel and dice apples into small chunks.
  2. In a medium saucepan over medium heat, combine cranberries, diced apples, sugar, cinnamon, and ginger. Stir occasionally until bubbling.
  3. Simmer for 20-25 minutes until cranberries burst and the mixture thickens.
  4. Remove from heat and let cool slightly to thicken further.
  5. Preheat oven to 375°F (190°C). Brush baguette slices with olive oil and arrange on a baking sheet.
  6. Bake for 10-12 minutes until golden brown. Top each crostini with the chutney before serving.
