Ingredients

For the Tarte Tatin
  • 4 large ripe bananas peeled and halved lengthwise
  • 1/2 cup unsalted butter for caramel
  • 1 cup granulated sugar for caramel
  • 1 sheet puff pastry thawed if frozen
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon optional

Method

Prepare the Caramel
  1. Preheat the oven to 375°F (190°C).
  2. In a 9-inch round cake pan, melt the butter over medium heat.
  3. Add the sugar and stir until dissolved, allowing it to bubble and turn a golden color.
  4. Remove from heat and stir in vanilla extract and cinnamon if using.
Arrange the Bananas
  1. Arrange the banana halves in the caramel, cut side up, in a circular pattern.
  2. Cover the bananas with the puff pastry, tucking the edges down around the bananas.
Bake the Tarte Tatin
  1. Bake in the preheated oven for 25-30 minutes or until the pastry is golden brown.
  2. Remove from oven and let it cool for 5 minutes.
  3. Carefully invert onto a serving plate while still warm.
