Ingredients
  

Pesto Ingredients
  • 2 cups fresh basil leaves packed
  • 2 cloves garlic peeled
  • 1/4 cup pine nuts lightly toasted
  • 1/2 cup Parmesan cheese grated
  • 1/2 cup extra virgin olive oil plus more if needed
  • 1/4 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste

Method
 

Make the Pesto
  1. In a food processor, combine the basil leaves, garlic, pine nuts, and Parmesan cheese. Pulse until finely chopped.
  2. With the processor running, slowly drizzle in the olive oil until the mixture is smooth and creamy.
  3. Scrape down the sides of the bowl as needed. Season with salt and black pepper to taste.
  4. If the pesto is too thick, add a little more olive oil to reach desired consistency.

Notes

Store pesto in an airtight container in the refrigerator for up to a week. To prevent browning, drizzle a thin layer of olive oil on top before sealing.
