Ingredients
  

For the Bruschetta
  • 1 loaf Baguette sliced
  • 2 cups Cherry Tomatoes halved
  • 1 cup Burrata Cheese scooped
  • 1 bunch Fresh Basil leaves only
  • 2 tablespoons Olive Oil extra virgin
  • 1 teaspoon Balsamic Vinegar optional
  • to taste Salt
  • to taste Black Pepper freshly ground

Method
 

Prepare the Bread
  1. Preheat the oven to 400°F (200°C). Arrange the baguette slices on a baking sheet.
  2. Drizzle the slices with olive oil and toast in the oven for about 5 minutes, or until golden brown.
Prepare the Topping
  1. In a bowl, combine the halved cherry tomatoes, basil leaves, olive oil, salt, and black pepper. Toss gently to combine.
  2. If using, drizzle with balsamic vinegar and mix again.
Assemble the Bruschetta
  1. Remove the toasted baguette slices from the oven.
  2. Top each slice with a generous spoonful of the tomato mixture and a piece of burrata cheese.
  3. Serve immediately, garnished with additional basil if desired.
