- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Toss the cubed butternut squash in olive oil, salt, and pepper. Spread on the baking sheet with whole garlic cloves.
- Roast for 25-30 minutes until tender and golden brown.
- Allow to cool slightly, then transfer roasted squash and garlic to a food processor. Add goat cheese and thyme.
- Blend until smooth and creamy. Taste and adjust seasoning as desired.
- Serve warm with pita chips or vegetable sticks.
