Ingredients
  

  • 2 cups butternut squash, cubed
  • 4 oz creamy goat cheese
  • 2 tbsp extra virgin olive oil
  • 2 cloves fresh garlic
  • 1 tsp fresh thyme or ½ tsp dried thyme
  • Salt and pepper to taste

Method
 

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss the cubed butternut squash in olive oil, salt, and pepper. Spread on the baking sheet with whole garlic cloves.
  3. Roast for 25-30 minutes until tender and golden brown.
  4. Allow to cool slightly, then transfer roasted squash and garlic to a food processor. Add goat cheese and thyme.
  5. Blend until smooth and creamy. Taste and adjust seasoning as desired.
  6. Serve warm with pita chips or vegetable sticks.
