Ingredients
  

  • 1 large flatbread
  • 2 medium sweet onions thinly sliced
  • 4 fresh figs halved
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 4 ounces goat cheese crumbled
  • 1 teaspoon fresh thyme leaves

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper if using store-bought flatbreads.
  2. In a skillet over medium heat, heat 1 tablespoon of olive oil. Add the sliced onions and cook slowly for about 15-20 minutes until golden brown and caramelized, stirring occasionally.
  3. While the onions are caramelizing, slice the fresh figs in half lengthwise.
  4. Once the onions are ready, spread the remaining olive oil over the flatbread. Layer on the caramelized onions and figs evenly. Crumble goat cheese over the top and sprinkle with fresh thyme.
  5. Bake in the preheated oven for 10-12 minutes until warmed through and slightly bubbly.
  6. Drizzle with balsamic vinegar before slicing and serving.
