Ingredients
  

  • 4 medium carrots
  • 1 inch fresh ginger grated
  • ½ cup unsalted peanuts
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp olive oil for cooking
  • 1 tbsp honey or maple syrup
  • 1 tsp sesame oil

Method
 

  1. Wash and peel the carrots, then slice them into thin julienne strips.
  2. Grate the fresh ginger to yield about one tablespoon.
  3. In a large skillet or wok over medium heat, add olive oil and let it shimmer before adding carrots. Stir-fry for about 5 minutes until they are tender-crisp.
  4. Add grated ginger and peanuts; stir-fry for an additional 2 minutes until fragrant.
  5. Drizzle in soy sauce, honey/maple syrup mixture, and sesame oil; toss well to coat for about 1 minute.
  6. Serve immediately, garnished with extra peanuts or sesame seeds if desired.
