Ingredients

  • 1 lb ground beef
  • 2 cups shredded sharp cheddar cheese
Vegetables
  • 4 medium Yukon Gold potatoes, sliced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
Liquids & Flavorings
  • 1 cup low-sodium beef broth
  • to taste salt
  • to taste pepper
  • 1 tsp dried thyme

Method
 

Cooking Instructions
  1. Preheat oven to 375°F (190°C) and prepare a baking dish with nonstick spray.
  2. In a skillet over medium heat, sauté diced onion and minced garlic until golden brown (about 5 minutes).
  3. Add ground beef to the skillet; cook until browned while breaking it apart (about 7 minutes).
  4. Stir in beef broth, salt, pepper, and dried thyme; let simmer for 5 minutes.
  5. Layer half of the sliced potatoes at the bottom of the baking dish. Spoon half of the beef mixture over them and sprinkle with half of the shredded cheese. Repeat layers.
  6. Cover with foil and bake for about 45 minutes. Remove foil during the last 10 minutes to allow cheese to bubble.
