- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Cut the cauliflower into bite-sized florets and place them in a large bowl.
- In a separate bowl, whisk together olive oil, chili powder, garlic powder, salt, pepper, and lime juice.
- Pour the mixture over the cauliflower florets and toss until evenly coated.
- Spread the florets on the baking sheet in a single layer and roast for 25-30 minutes until golden brown and tender, shaking the pan halfway through for even cooking.
- Allow to cool slightly before serving. Drizzle with additional lime juice if desired.
