  • 2 cups corn kernels fresh or frozen
  • 1 cup diced tomatoes fresh or canned
  • 1/2 cup red onion finely chopped
  • 1/4 cup cilantro chopped
  • 1 medium jalapeño seeded and minced
  • 1 lime juice freshly squeezed
Seasoning
  • 1 teaspoon chipotle powder or more to taste
  • 1/2 teaspoon salt to taste

Method
 

Preparation
  1. In a mixing bowl, combine the corn, diced tomatoes, red onion, cilantro, jalapeño, and lime juice.
  2. Add the chipotle powder and salt, mixing well to combine all ingredients.
  3. Taste and adjust seasoning if necessary.
  4. Serve immediately or refrigerate for 30 minutes to allow flavors to meld.
