Step-by-Step Instructions
- Grease a 9x13-inch ceramic or glass baking dish generously with 1 tablespoon of butter. Spread the cubed brioche bread evenly across the prepared baking dish.
- In a large mixing bowl or pitcher, whisk together the eggs, whole milk, heavy cream, brown sugar, vanilla extract, cinnamon, nutmeg, and sea salt until completely smooth and well blended.
- Pour the egg custard evenly over all the brioche cubes in the baking dish. Gently press the bread down with a spatula so every piece absorbs the custard.
- In a small bowl, stir together the melted butter, 1/2 cup brown sugar, 1 tablespoon cinnamon, and 1 tablespoon flour until combined into a glossy swirl. Drizzle this cinnamon butter mixture evenly over the top of the bread, using a butter knife to swirl it through the custard-soaked brioche.
- Bake immediately or cover tightly with foil and refrigerate overnight (up to 12 hours). If refrigerated overnight, let rest at room temperature for 20 minutes before baking.
- Preheat oven to 350°F (175°C). Bake uncovered for 35 to 40 minutes, until the casserole is puffed, golden brown on top, with crispy caramelized edges and a set custard center (an inserted knife should come out clean).
- While the casserole bakes, prepare the cream cheese glaze: In a medium bowl, beat the softened cream cheese and butter until fluffy. Beat in powdered sugar, vanilla, and 2 tablespoons of warm milk until smooth, glossy, and pourable.
- Remove the casserole from the oven and let cool for 5 minutes. Drizzle the warm cream cheese glaze generously all over the top. Slice into squares and serve warm with fresh berries, maple syrup, or hot coffee!
