Ingredients
  

Rice Base
  • 1 cup long-grain rice such as jasmine or basmati
  • 1 cup coconut milk full-fat for creaminess
  • 1 cup water
  • 1 teaspoon salt
Optional Garnishes
  • 2 tablespoons fresh cilantro chopped
  • 1 tablespoon lime juice freshly squeezed

Method
 

Cooking the Rice
  1. Rinse the rice under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan, combine the rinsed rice, coconut milk, water, and salt.
  3. Bring the mixture to a boil over medium-high heat.
  4. Once boiling, reduce the heat to low, cover, and simmer for about 18-20 minutes or until the rice is tender and the liquid is absorbed.
  5. Remove from heat and let it sit, covered, for 5 minutes.
  6. Fluff the rice with a fork before serving.
Serving
  1. Serve the coconut rice warm, garnished with fresh cilantro and a squeeze of lime juice if desired.
