Ingredients
  

Rice Base
  • 2 cups white rice or brown rice
  • 4 cups water
  • 1 teaspoon salt
  • 1 tablespoon lime juice freshly squeezed
  • 1 tablespoon cilantro chopped
Protein
  • 1 pound chicken breast boneless, skinless
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Toppings
  • 1 cup black beans canned, drained and rinsed
  • 1 cup corn canned or frozen
  • 1 cup salsa your choice
  • 1 cup shredded cheese cheddar or Monterey Jack
  • 1 cup sour cream or Greek yogurt
  • 1 cup guacamole optional
  • 1 cup lettuce shredded
  • 1 medium tomato diced

Method
 

Prepare the Rice
  1. Rinse the rice under cold water until the water runs clear. In a rice cooker, combine rice, water, and salt. Cook according to rice cooker instructions.
  2. Once cooked, fluff the rice with a fork and stir in lime juice and cilantro. Set aside.
Cook the Chicken
  1. In a mixing bowl, combine olive oil, cumin, chili powder, garlic powder, onion powder, salt, and black pepper. Add the chicken and coat well.
  2. Preheat the grill over medium-high heat. Grill the chicken for 6-7 minutes on each side or until fully cooked. Let it rest before slicing.
Assemble the Bowl
  1. In each bowl, layer a base of rice, followed by sliced chicken, black beans, corn, salsa, cheese, sour cream, guacamole, lettuce, and diced tomatoes.
  2. Serve immediately and enjoy your homemade Chipotle bowl!
