Ingredients
  

Wet Ingredients
  • 1 cup cottage cheese preferably low-fat
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon honey or maple syrup
Dry Ingredients
  • 1 cup oats rolled or quick oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup protein powder optional

Method
 

Prepare the Batter
  1. In a mixing bowl, combine cottage cheese, eggs, vanilla extract, and honey. Whisk until smooth.
  2. In another bowl, mix oats, baking powder, baking soda, salt, and protein powder.
  3. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
Cook the Waffles
  1. Preheat the waffle iron according to the manufacturer's instructions.
  2. Pour the batter into the preheated waffle iron, using enough to cover the surface.
  3. Cook for about 5-7 minutes, or until the waffles are golden brown and crisp.
  4. Carefully remove the waffles and repeat with the remaining batter.
Serve
  1. Serve warm with your favorite toppings such as fresh fruit, yogurt, or syrup.
