Ingredients
  

Tofu Nuggets
  • 14 oz firm tofu
  • 2 tbsp sesame oil
  • 2 tbsp low-sodium soy sauce
  • 1/4 cup toasted sesame seeds
  • 1 cup panko breadcrumbs
  • 2 tbsp honey or maple syrup
  • 1 tbsp rice vinegar

Method
 

Preparation
  1. Press the tofu between two plates with weight on top for 15-20 minutes to remove excess moisture.
  2. Cut the pressed tofu into nugget-sized pieces and marinate in a mixture of soy sauce and sesame oil for at least 30 minutes.
  3. Coat each piece in a mixture of panko breadcrumbs and toasted sesame seeds.
  4. Preheat the oven to 400°F (200°C) and arrange the coated tofu on a parchment-lined baking sheet. Bake for 25-30 minutes until golden brown.
  5. While baking, mix honey (or maple syrup) with rice vinegar to create your dipping sauce.
  6. Serve the crispy nuggets hot with the dipping sauce.

Notes

Feel free to customize the nuggets with different marinades. Store leftovers in an airtight container in the fridge for up to three days. Reheat at 350°F for about 10 minutes to maintain crispiness. You can freeze the baked nuggets for up to three months.
