Ingredients
  

  • 3 lb corned beef brisket
  • 1 medium green cabbage, cut into wedges
  • 4 large carrots, sliced into thick rounds
  • 1 lb Yukon Gold potatoes, quartered
  • 1 large onion, coarsely chopped
  • 4 cups low-sodium beef broth
  • 1 packet spice packet (mustard seeds, coriander, peppercorns)

Method
 

  1. Rinse the corned beef under cold water. Prepare the vegetables: chop the cabbage, slice the carrots, quarter the potatoes, and coarsely chop the onion.
  2. Layer the ingredients in a crock pot: place the corned beef at the bottom, top with onions, then carrots and potatoes, and finally add cabbage wedges on top.
  3. Pour enough beef broth to cover everything except for the cabbage. Sprinkle the spice packet over the top.
  4. Cover and cook on low for 8-10 hours until the meat is tender.
  5. Slice the corned beef against the grain and serve with vegetables drizzled with broth.
