Ingredients
  

  • 2 lbs russet potatoes, peeled and chopped
  • 1/2 cup unsalted butter, melted (1 stick)
  • 1/2 cup heavy cream
  • 1/2 cup sour cream
  • 1 tsp garlic powder
  • 1/4 cup fresh parsley, finely chopped
  • 1 tbsp fresh thyme, finely chopped
  • 1 tbsp fresh rosemary, finely chopped
  • Salt and pepper to taste

Method
 

  1. Boil potatoes in cold salted water until fork-tender, about 15-20 minutes.
  2. While potatoes cook, melt unsalted butter in a skillet over medium heat until golden brown and fragrant.
  3. Drain cooked potatoes and return them to the pot. Add brown butter, heavy cream, sour cream, garlic powder, salt, and pepper. Mash until smooth.
  4. Fold in chopped herbs gently.
  5. Preheat oven to 375°F (190°C). Transfer potato mixture to a greased baking dish; smooth the top.
  6. Bake for 25-30 minutes until golden brown on top.
