  • 4 pieces boneless, skinless chicken breasts
  • 2 cups fresh baby spinach
  • 1 14 oz can artichoke hearts, drained and chopped
  • 8 oz cream cheese, softened
  • 1 tsp garlic powder
  • ½ cup grated Parmesan cheese
  • 1 tbsp olive oil

Method
 

  1. Preheat oven to 375°F (190°C). Lightly spray a baking dish with nonstick cooking spray.

  3. Slice each chicken breast horizontally to create pockets and fill generously with the mixture. Secure with toothpicks.
  4. Heat olive oil in an oven-safe skillet over medium-high heat. Sear the stuffed chicken for 4-5 minutes per side until golden brown.
  5. Transfer the skillet to the oven and bake for 20-25 minutes until the internal temperature reaches 165°F (74°C).
