  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 2 tsp cumin
  • 2 tsp coriander
  • 1 tsp turmeric
  • 2 tbsp tomato paste
  • 1 cup full-fat coconut milk
  • 1 cup frozen peas
  • Salt to taste
  • Pepper to taste

Cooking Instructions
  1. In a large skillet over medium heat, add a splash of oil. Sauté the chopped onions until golden brown (5-7 minutes). Add minced garlic and ginger; cook until fragrant.
  2. Increase heat slightly and add ground beef. Break apart with a wooden spoon and cook until browned (8-10 minutes).
  3. Stir in cumin, coriander, turmeric, salt, and pepper. Cook for another minute until fragrant.
  4. Mix in tomato paste until combined; then slowly incorporate coconut milk while stirring. Bring to a gentle simmer.
  5. Fold in frozen peas and let the curry simmer on low heat for about 10 minutes to meld the flavors.
  6. Serve over steamed rice or with warm naan.
