  • 2 medium yellow onions
  • 1 head garlic
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

  • 1 cup sour cream

Method
 

Cooking Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Slice the onions into thin wedges and place them on a baking sheet. Drizzle with olive oil, salt, and pepper; toss to coat.
  3. Roast the onions for 25-30 minutes until golden brown, adding whole garlic cloves halfway through.
  4. In a food processor, combine the roasted onions, garlic, softened cream cheese, sour cream, and any remaining olive oil. Blend until smooth.
  5. Taste and adjust seasoning as needed.
  6. Transfer to a serving bowl and enjoy with fresh veggies or pita chips.
