  • 1/2 cup freshly squeezed lime juice
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup thinly sliced red onion
  • 1 small jalapeño finely diced
  • 1/2 teaspoon salt

Method
 

  1. Rinse scallops under cold water and pat dry.
  2. Slice scallops into thin rounds (about 1/4 inch thick).
