Crust
  • 1.5 cups Graham cracker crumbs
  • 0.5 cups Unsalted butter melted
  • 0.25 cups Granulated sugar
Filling
  • 16 oz Cream cheese softened
  • 0.75 cups Granulated sugar
  • 0.5 cups Sour cream
  • 1 tbsp Vanilla extract
  • 3 large Eggs room temperature
Topping
  • 2 cups Fresh strawberries sliced
  • 0.25 cups Sugar
  • 1 tbsp Lemon juice

Method
 

Preparing the Crust
  1. In a bowl, combine graham cracker crumbs, melted butter, and 0.25 cups of granulated sugar. Press into the base of a springform pan to form the crust.
Making the Filling
  1. In a large mixing bowl, beat the softened cream cheese and 0.75 cups of granulated sugar until smooth.
  2. Add sour cream, vanilla extract, and eggs, one at a time, mixing well after each addition until fully combined.
  3. Pour the cream cheese mixture over the crust in the springform pan.
Chilling and Topping
  1. Refrigerate for at least 4 hours or until set.
  2. Before serving, prepare the topping by mixing sliced strawberries, 0.25 cups of sugar, and lemon juice in a separate bowl until strawberries are coated.
  3. Top the cheesecake with the strawberry mixture just before serving.
