  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup cooked bacon bits
  • 1/2 cup sour cream
  • 2 tablespoons butter
  • 2 green onions, chopped

Method
 

  1. Preheat your oven to 400°F (200°C). Scrub the russet potatoes under running water.
  2. Bake the potatoes directly on the oven rack for 45-60 minutes until tender.
  3. Let cool slightly, then cut each potato in half lengthwise and scoop out the insides into a mixing bowl.
  4. Mash the potato flesh with butter, sour cream, cheddar cheese, and bacon bits. Season with salt and pepper to taste.
  5. Spoon the filling back into the potato skins and top with extra cheese.
  6. Return to the oven for an additional 15-20 minutes until golden brown on top.
