Ingredients
  

Vegetables
  • 4 cups cauliflower florets
  • 2 cups sliced cremini and portobello mushrooms
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 2 cups fresh spinach or kale
Liquids and Seasonings
  • 4 cups low-sodium vegetable broth
  • 1 tsp dried thyme
  • 1 leaf bay leaf

Method
 

Preparation
  1. Wash and chop the cauliflower into bite-sized pieces. Slice the mushrooms, dice the onion, and mince the garlic.
Sautéing
  1. In a skillet over medium heat, drizzle olive oil and sauté onion and garlic until translucent (about 3 minutes).
Cooking
  1. Transfer the sautéed mixture to the crockpot. Add cauliflower, mushrooms, vegetable broth, thyme, bay leaf, and stir well.
  2. Cover and cook on low for 6 hours or high for 3 hours.
  3. About 30 minutes before serving, add spinach or kale to the crockpot.
  4. Stir before serving hot with bread or rice.

Notes
