  • 1 lb beef sirloin, thinly sliced
  • 8 oz mushrooms, sliced
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup low-sodium beef broth
  • 1 cup full-fat sour cream
  • 2 tbsp all-purpose flour
  • 2 tbsp olive oil
  • Salt and pepper to taste

  1. Prepare ingredients: chop onions and garlic finely; slice the beef into thin strips.
  2. In a large skillet over medium heat, add olive oil and sauté onions and garlic until fragrant and translucent (about 5 minutes).
  3. Push aromatics aside and add beef strips; brown quickly on all sides (about 3 minutes). Season with salt and pepper.
  4. Add sliced mushrooms, stirring everything together; cook until mushrooms are soft (around 5 minutes).
  5. Sprinkle flour over the mixture; gradually pour in beef broth while stirring continuously until smooth.
  6. Reduce heat to low and stir in sour cream until well combined. Simmer gently for another few minutes until thickened.
