  • 1 box yellow cake mix (dry)
  • 1 cup water
  • 1/2 cup vegetable oil
  • 3 large eggs
Cream Cheese Layer
  • 8 oz cream cheese (softened)
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 1 large egg
Strawberry Layer
  • 2 cups fresh strawberries (sliced)
  • 1/4 cup sugar for sprinkling on top
Serving
  • 1 cup whipped cream (for serving)

Method
 

Preparation
  1. Preheat oven according to cake mix package instructions.
  2. In a large mixing bowl, combine the yellow cake mix, water, vegetable oil, and 3 large eggs. Mix until well combined.
  3. In another bowl, beat the softened cream cheese with 1/2 cup sugar and 1 tsp vanilla extract until smooth.
  4. Stir the large egg into the cream cheese mixture until well blended.
Assembly
  1. Pour half of the cake batter into a greased baking dish.
  2. Spread the cream cheese mixture over the batter.
  3. Layer the sliced fresh strawberries on top of the cream cheese mixture.
  4. Pour the remaining cake batter over the strawberries.
  5. Sprinkle 1/4 cup sugar on top of the cake batter.
Baking
  1. Bake in the preheated oven for 45 minutes or until a toothpick inserted into the center comes out clean.
  2. Allow to cool before serving with whipped cream.
