Ingredients
  

  • 3 cups boneless, skinless chicken breasts (cooked and shredded)
  • 2 cloves fresh garlic (minced)
  • 8 medium flour tortillas
  • 2 cups shredded Monterey Jack cheese
  • 1 cup sour cream
  • 10.5 oz cream of chicken soup
  • 4 oz diced green chiles (canned)

Method
 

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. Boil the chicken in salted water until cooked (15-20 minutes), then shred it using two forks.

  4. Fill each tortilla with the mixture, roll tightly, and place seam-side down in the baking dish.
  5. Mix the cream of chicken soup and green chiles; pour over the enchiladas and top with remaining cheese.
  6. Bake for 25-30 minutes until bubbly and golden brown.
