Ingredients
  

  • 1 cup green or brown lentils cooked
  • 1 cup chopped walnuts toasted
  • 1 cup dried figs chopped
  • 1 medium onion finely chopped
  • 3 cloves garlic minced
  • 1 cup whole grain or gluten-free breadcrumbs
  • 1 cup vegetable broth
  • 2 tbsp fresh herbs thyme or rosemary
  • Salt to taste
  • Pepper to taste

Method
 

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a saucepan, combine cooked lentils and vegetable broth; bring to a boil, then simmer for 20-25 minutes until tender.
  3. Sauté onions and garlic in olive oil over medium heat until soft, about 5 minutes.
  4. In a mixing bowl, combine cooked lentils, sautéed onions and garlic, chopped walnuts, dried figs, breadcrumbs, herbs, salt, and pepper.
  5. Transfer the mixture into the prepared loaf pan; press gently to pack.
  6. Bake for 40-45 minutes until golden brown; let cool slightly before slicing.
