Ingredients

Dry Oat Foundation & Leavening
  • 2 cups rolled oats
  • 1 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/4 tsp fine sea salt
Lemon Maple Wet Batter
  • 1 3/4 cups almond milk
  • 1/3 cup pure maple syrup
  • 2 large eggs
  • 2 tbsp unsalted butter or coconut oil melted
  • 2 lemons lemon zest
  • 2 tbsp fresh lemon juice
  • 1 tsp pure vanilla extract
Fresh Berries & Serving Garnish
  • 1 1/2 cups fresh blueberries
  • 1 serving Greek yogurt and maple syrup

Method

Step-by-Step Instructions
  1. Preheat Oven & Prep Dish: Preheat your oven to 375°F (190°C). Lightly grease an 8x8-inch or 9x9-inch ceramic baking dish with butter or virgin coconut oil.
  2. Combine Dry Ingredients: In a large mixing bowl, whisk together the rolled oats, baking powder, ground cinnamon, and fine sea salt until evenly distributed.
  3. Whisk Wet Aromatics: In a separate medium bowl, whisk together the almond milk, pure maple syrup, eggs, melted butter, fresh lemon zest, fresh lemon juice, and vanilla extract until smooth and fragrant.
  4. Combine & Fold Berries: Pour the wet mixture over the dry oats. Stir with a spatula until just incorporated. Gently fold in 1 1/4 cups of fresh blueberries, being careful not to crush them.
  5. Assemble in Baking Dish: Pour the oat mixture into the prepared ceramic dish, spreading into an even layer. Scatter the remaining 1/4 cup of fresh blueberries across the top for a gorgeous bakery-style look.
  6. Bake Golden & Tender: Bake at 375°F for 25 to 30 minutes, until the top is golden-brown, the edges are lightly toasted, and the center is set (a toothpick inserted in the center comes out clean).
  7. Rest, Slice & Serve: Allow the baked oatmeal to cool and set in the dish for 10 minutes before slicing into 6 generous squares. Serve warm topped with a dollop of Greek yogurt and a drizzle of pure maple syrup!
