- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a medium bowl, whisk together flour, ginger, cinnamon, baking soda, and salt.
- In a large bowl, beat softened butter, brown sugar, and granulated sugar until fluffy. Mix in the egg and vanilla extract.
- Gradually add the dry ingredients to the wet mixture until just combined.
- Scoop dough into balls, roll in granulated sugar, and place on prepared sheets.
- Bake for 10–12 minutes until set but soft in the center. Cool on racks for about 5 minutes.
- For the filling, beat cream cheese and powdered sugar until smooth. Spread between cooled cookies to assemble.
