Ground Beef Enchiladas with Red Sauce

Delicious and hearty enchiladas filled with seasoned ground beef and topped with a rich red sauce.

Ingredients
  

Filling
  • 1 lb ground beef preferably lean
  • 1 cup onion chopped
  • 2 cloves garlic minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp salt
  • 1 cup cheddar cheese shredded
  • 8 count tortillas corn or flour
Red Sauce
  • 1 can red enchilada sauce 15 oz
  • 1 tsp cumin
  • 1 tsp garlic powder

Method
 

Prepare the Filling
  1. In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  2. Add chopped onion and minced garlic to the skillet, cooking until the onion is translucent.
  3. Stir in cumin, chili powder, and salt. Remove from heat and mix in shredded cheese.
Assemble the Enchiladas
  1. Preheat the oven to 350°F (175°C).
  2. Spread a thin layer of red enchilada sauce on the bottom of a baking dish.
  3. Fill each tortilla with the beef mixture, roll them up, and place seam-side down in the baking dish.
  4. Pour remaining enchilada sauce over the top and sprinkle with additional cheese.
Bake
  1. Cover the baking dish with foil and bake for 20 minutes.
  2. Remove the foil and bake for an additional 10 minutes, or until cheese is bubbly and golden.
