Ingredients
  

Rice
  • 2 cups cooked jasmine rice preferably day-old
Vegetables
  • 1 cup pineapple chunks fresh or canned
  • 1 cup peas
  • 1 medium carrot diced
  • 1 cup bell pepper diced
  • 3 stalks green onions sliced
Sauce
  • 3 tablespoons soy sauce or tamari for gluten-free
  • 1 tablespoon sesame oil
  • 1 tablespoon oyster sauce optional
Protein
  • 1 cup tofu cubed and pan-fried
Seasoning
  • 1 teaspoon garlic minced
  • 1 teaspoon ginger minced
  • 1 teaspoon black pepper

Method
 

Preparation
  1. Prepare all ingredients by chopping vegetables and cubing tofu.
  2. If using day-old rice, break up any clumps.
Cooking
  1. Heat sesame oil in a wok over medium-high heat.
  2. Add garlic and ginger, sauté for 1 minute until fragrant.
  3. Add diced carrot and bell pepper, stir-fry for 3-4 minutes.
  4. Stir in peas and pineapple, cooking for another 2 minutes.
  5. Add cooked rice and tofu, pour in soy sauce and oyster sauce, stir well to combine.
  6. Cook for an additional 3-5 minutes, stirring frequently.
  7. Garnish with sliced green onions and serve hot.
