Ingredients
  

Shrimp and Grains
  • 1 lb shrimp, peeled and deveined Use large shrimp for best results.
  • 1 cup quinoa Rinse before cooking.
  • 2 cups water For cooking quinoa.
Vegetables
  • 1 cup bell pepper, diced Any color.
  • 1 cup broccoli florets Fresh or frozen.
  • 1 cup carrots, sliced Use fresh or pre-cut.
Sauce
  • 2 tbsp soy sauce Low sodium preferred.
  • 1 tbsp sesame oil For flavor.
  • 1 tbsp ginger, minced
  • 2 cloves garlic, minced
Garnish
  • 2 tbsp green onions, sliced For topping.
  • 1 tbsp sesame seeds Optional.

Method
 

Prepare Quinoa
  1. Rinse quinoa under cold water. In a rice cooker, combine quinoa and water, and cook according to manufacturer's instructions.
Cook Shrimp and Vegetables
  1. In a skillet over medium heat, add sesame oil. Once hot, add garlic and ginger, sauté for 1 minute.
  2. Add shrimp and cook until pink, about 3-4 minutes. Add bell pepper, broccoli, and carrots, cooking until vegetables are tender, about 5-7 minutes.
Combine and Serve
  1. Stir in soy sauce and mix well. Serve shrimp and vegetables over cooked quinoa, garnished with green onions and sesame seeds.
