- Preheat your oven to 400°F (200°C). Lightly spray a baking dish with nonstick cooking spray.
- In a medium saucepan over low heat, melt butter, hot honey, brown sugar, and cinnamon until combined, stirring frequently.
- Toss the cubed sweet potatoes in the baking dish with the caramel mixture until evenly coated.
- Cover with aluminum foil and bake for 25 minutes. Remove foil and stir; bake uncovered for an additional 15 minutes until tender and caramelized.
- Serve warm, drizzling any remaining sauce over the top.
