  • 2 lbs sweet potatoes, peeled and cubed
  • 1/4 cup hot honey
  • 1/4 cup brown sugar
  • 4 tbsp unsalted butter
  • 1 tsp ground cinnamon

Method
 

  1. Preheat your oven to 400°F (200°C). Lightly spray a baking dish with nonstick cooking spray.
  2. In a medium saucepan over low heat, melt butter, hot honey, brown sugar, and cinnamon until combined, stirring frequently.
  3. Toss the cubed sweet potatoes in the baking dish with the caramel mixture until evenly coated.
  4. Cover with aluminum foil and bake for 25 minutes. Remove foil and stir; bake uncovered for an additional 15 minutes until tender and caramelized.
  5. Serve warm, drizzling any remaining sauce over the top.
