- Preheat the oven to 400°F (200°C). Halve the butternut squash, scoop out seeds, place cut-side down on a baking sheet lined with parchment paper, and roast for 30-40 minutes until tender.
- Once cooled, scoop out the flesh into a mixing bowl. Add flour, eggs, green onions, garlic powder, salt, and pepper; mix until combined.
- Heat oil in a skillet over medium heat until shimmering.
- Drop heaping tablespoons of batter into the skillet, flatten slightly, and fry for about 3-4 minutes on each side until golden brown.
- Transfer cooked fritters to paper towels to drain excess oil. Serve warm with your favorite dipping sauce.
