Ingredients
  

  • 1 medium butternut squash (about 2 cups cooked)
  • 1 cup all-purpose flour (or gluten-free flour)
  • 2 large eggs
  • 4 pieces green onions finely chopped
  • 1 tsp garlic powder
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp olive oil (for frying)

Method
 

  1. Preheat the oven to 400°F (200°C). Halve the butternut squash, scoop out seeds, place cut-side down on a baking sheet lined with parchment paper, and roast for 30-40 minutes until tender.
  2. Once cooled, scoop out the flesh into a mixing bowl. Add flour, eggs, green onions, garlic powder, salt, and pepper; mix until combined.
  3. Heat oil in a skillet over medium heat until shimmering.
  4. Drop heaping tablespoons of batter into the skillet, flatten slightly, and fry for about 3-4 minutes on each side until golden brown.
  5. Transfer cooked fritters to paper towels to drain excess oil. Serve warm with your favorite dipping sauce.
