- Preheat your oven to 375°F (190°C). Grease a baking dish with nonstick cooking spray.
- In a skillet, melt 2 tablespoons of butter over medium heat. Add sliced onions and cook for about 15-20 minutes until golden brown.
- In a bowl, mix heavy cream with minced garlic, thyme, salt, and pepper.
- Layer half of the potatoes in the baking dish, followed by half of the caramelized onions and a third of the cream mixture. Repeat layers, finishing with the remaining cream mixture.
- Top with Gruyère and cheddar cheese. Cover with foil and bake for 45 minutes. Remove foil and bake for an additional 15-20 minutes until golden brown.
