Sweet Potato Mixture
  • 3-4 medium sweet potatoes about 2 lbs
  • 1 cup plain Greek yogurt
  • 1/4 cup pure maple syrup
  • 1 tsp ground cinnamon
Topping
  • 1/2 cup chopped pecans
  • 1 cup rolled oats
  • 2 tbsp brown sugar
  • 1 tsp ground cinnamon

Method
 

Preparation
  1. Preheat oven to 350°F (175°C) and lightly spray an oven-safe baking dish with nonstick cooking spray.
  2. Boil peeled and chopped sweet potatoes in water until fork-tender (about 15-20 minutes). Drain and mash until smooth.
  3. In a bowl, mix mashed sweet potatoes with Greek yogurt, maple syrup, cinnamon, and salt until well blended.
Topping Preparation
  1. In another bowl, combine oats, pecans, brown sugar, and cinnamon. Add melted coconut oil or butter to bind the mixture.
Assembly and Baking
  1. Spread sweet potato mixture in the baking dish and top with oat-pecan mix.
  2. Bake for about 30 minutes or until bubbly and golden brown.
