Ingredients
  

Mac and Cheese Base
  • 8 oz elbow macaroni
  • 4 cups water for boiling
  • 2 tbsp butter unsalted
  • 2 tbsp all-purpose flour
  • 2 cups milk whole or 2%
  • 2 cups cheddar cheese shredded
  • 1 cup cream cheese softened
  • 1 tsp salt
  • 1/2 tsp black pepper
Toppings
  • 1 cup bacon cooked and crumbled
  • 1 cup green onions sliced
  • 1 cup jalapeños sliced
  • 1 cup bread crumbs for topping
  • 1 cup broccoli steamed and chopped
  • 1 cup tomatoes diced
  • 1 cup extra cheese for topping

Method
 

Prepare the Mac and Cheese
  1. In a large pot, bring water to a boil and cook the elbow macaroni according to package instructions until al dente. Drain and set aside.
  2. In the same pot, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes until golden.
  3. Gradually whisk in the milk, cooking until the mixture thickens. Stir in the cheddar cheese and cream cheese until melted and smooth.
  4. Add the cooked macaroni to the cheese sauce and mix well. Season with salt and pepper.
Assemble the Mac and Cheese Bar
  1. Transfer the mac and cheese to a baking dish and top with bread crumbs and extra cheese.
  2. Bake in a preheated oven at 350°F (175°C) for 15-20 minutes until bubbly and golden.
  3. Serve with a variety of toppings on the side for guests to customize their mac and cheese.
