  • 2 cups heavy cream
  • 1/2 cup granulated sugar plus extra for caramelizing
  • 6 large egg yolks
  • 1/3 cup pure maple syrup
  • 1/2 cup chopped pecans toasted
  • 1 tsp vanilla extract

Method
 

  1. Preheat your oven to 325°F (163°C).
  2. In a saucepan over low heat, warm the heavy cream and maple syrup until just simmering.
  3. In a bowl, whisk together egg yolks and granulated sugar until pale. Gradually add the warm cream mixture while whisking to avoid scrambling.
  4. Stir in vanilla extract and chopped pecans until evenly mixed.
  5. Pour the custard into ramekins placed in a baking dish filled with hot water. Bake for 30-35 minutes until just set.
  6. Chill for at least 2 hours. Before serving, sprinkle sugar on top and caramelize with a kitchen torch.
