Ingredients
  

Beef Mixture
  • 1 lb ground beef preferably lean
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 tbsp olive oil for cooking
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup beef broth
  • 1 cup black beans cooked
  • 1 cup corn canned or frozen
  • 1 cup bell pepper chopped
Toppings
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1 cup sour cream
  • 1 cup salsa
  • 1/2 cup fresh cilantro chopped

Method
 

Cook the Beef
  1. In a skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until translucent.
  2. Add ground beef to the skillet. Cook until browned, breaking it apart with a wooden spoon.
  3. Stir in chili powder, cumin, paprika, salt, and black pepper. Mix well.
  4. Pour in beef broth, black beans, corn, and bell pepper. Stir to combine and let simmer for 10 minutes.
Serve
  1. Serve the beef mixture in bowls or tortillas, topped with shredded cheese, sour cream, salsa, and cilantro.
