Ingredients
  

Base
  • 1 cup Brown rice Cooked
  • 1 can Black beans Rinsed and drained
Toppings
  • 1 cup Corn Fresh or frozen
  • 1 cup Cherry tomatoes Halved
  • 1 cup Red bell pepper Diced
  • 1 cup Avocado Diced
  • 1/2 cup Red onion Diced
  • 1/4 cup Cilantro Chopped
Dressing
  • 2 tablespoons Olive oil
  • 1 lime Lime juice Freshly squeezed
  • 1 teaspoon Cumin
  • 1 teaspoon Chili powder
  • 1/2 teaspoon Salt To taste

Method
 

Prepare the base
  1. Cook the brown rice according to package instructions.
  2. In a large pot, heat the black beans over medium heat until warmed through.
Prepare the toppings
  1. Chop the cherry tomatoes, red bell pepper, avocado, red onion, and cilantro.
  2. In a small bowl, mix together the olive oil, lime juice, cumin, chili powder, and salt to create the dressing.
Assemble the bowl
  1. In serving bowls, layer the cooked brown rice and black beans as the base.
  2. Top with corn, cherry tomatoes, red bell pepper, avocado, red onion, and cilantro.
  3. Drizzle the dressing over the top and serve immediately.
