Ingredients
  

  • 4 pieces salmon fillets 6 oz each
  • 4 tbsp white miso paste
  • 4 tbsp unsalted butter softened
  • 4 pieces scallions finely chopped
  • 2 tbsp fresh parsley chopped
  • 1 pieces lemon Juice of
  • 3 tbsp olive oil
  • 2 cloves garlic minced
  • Salt to taste
  • Pepper to taste

Method
 

  1. Preheat the oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. In a small bowl, mix softened butter and miso paste until smooth.
  3. Place salmon fillets in the baking dish skin-side down. Spread the miso butter mixture generously on top.
  4. Roast the salmon in the preheated oven for 12-15 minutes or until it flakes easily with a fork.
  5. While the salmon cooks, combine scallions, parsley, olive oil, lemon juice, garlic, salt, and pepper in another bowl to create the salsa verde.
  6. Once the salmon is done, serve it hot drizzled with scallion salsa verde.
