Cooking Steps
  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash and peel the carrots, then cut them into even sticks about 2 inches long.
  3. In a bowl, whisk together miso paste, soy sauce, honey, and olive oil until smooth.
  4. Place carrot sticks on the baking sheet in a single layer and drizzle with the miso glaze; toss to coat evenly.
  5. Roast for 20-25 minutes until tender and caramelized, shaking halfway through cooking.
  6. Remove from the oven and sprinkle with toasted sesame seeds before serving.
