  • 1/4 cup creamy peanut butter
  • 3 tbsp low-sodium soy sauce
  • 1/2 cup vegetable broth
Vegetables
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 2 garlic cloves, minced
  • 1 tbsp sesame oil

Preparation
  1. Chop the bell pepper and broccoli into bite-sized pieces.

  4. While veggies are cooking, whisk together peanut butter, soy sauce, garlic, and vegetable broth until smooth.
  5. Combine drained noodles with sautéed vegetables; pour the sauce over the top and toss well to coat.
  6. Serve immediately, garnished with chopped peanuts or green onions if desired.
