Ingredients
  

Filling
  • 4 cups fresh peaches, sliced about 4-5 medium peaches
  • 1 cup granulated sugar adjust based on sweetness of peaches
  • 2 tablespoons all-purpose flour for thickening
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon optional
  • 1 tablespoon lemon juice to enhance flavor
Crust
  • 1 package pie crusts store-bought or homemade
  • 1 tablespoon butter for dotting on top

Method
 

Prepare the Filling
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine sliced peaches, sugar, flour, vanilla extract, cinnamon, and lemon juice. Toss until peaches are well coated.
Assemble the Cobbler
  1. Place one pie crust in the bottom of a 9-inch pie dish.
  2. Pour the peach filling into the crust, spreading it evenly.
  3. Dot the filling with small pieces of butter.
  4. Cover with the second pie crust, sealing the edges and cutting slits for steam to escape.
Bake
  1. Bake in the preheated oven for 45 minutes or until the crust is golden brown and the filling is bubbly.
  2. Let cool for at least 10 minutes before serving.
