Method
Make the Pie Crust
- In a mixing bowl, combine flour and salt. Add cold butter and mix until crumbly.
- Gradually add ice water, mixing until the dough comes together. Divide into two discs, wrap in plastic, and refrigerate for at least 30 minutes.
Prepare the Filling
- In a bowl, combine diced peaches, sugar, lemon juice, cornstarch, and cinnamon. Mix well and set aside.
Assemble the Hand Pies
- Preheat the oven to 375°F (190°C). Roll out one disc of dough on a floured surface to about 1/8 inch thick.
- Cut out circles using a cookie cutter or a glass. Place a tablespoon of filling on one half of each circle. Fold over and seal the edges with a fork.
- Repeat with the second disc of dough. Place the pies on a baking sheet lined with parchment paper.
- Brush the tops with beaten egg and sprinkle with sugar.
Bake the Pies
- Bake in the preheated oven for 25-30 minutes or until golden brown. Let cool before serving.
