  • 1/4 cup granulated sugar
Frangipane Filling
  • 1/2 cup almond flour
  • 2 large eggs
Topping
  • 2 medium ripe pears sliced
  • 1/4 cup sliced almonds for topping

Method
 

Preparation
  1. Preheat oven to 375°F (190°C). In a bowl, combine all-purpose flour and granulated sugar. Cut in cold butter until crumbly.
  2. Mix in egg yolk, form into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.
Assemble
  1. Roll out chilled dough on a floured surface to an eighth-inch thick and place in a tart pan; trim excess dough.
  2. In another bowl, beat almond flour, sugar, eggs, and melted butter until smooth.
  3. Spread frangipane filling evenly over the crust and arrange sliced pears on top.
  4. Sprinkle with sliced almonds and bake for 35-40 minutes until golden brown.
  5. Allow to cool slightly before slicing; serve warm or at room temperature.
