  • 4 ripe pears, peeled and sliced
  • 1/2 cup unsalted butter (1 stick)
  • 1 cup brown sugar packed
  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 cup pure maple syrup
  • 2 large eggs
  • 1 tsp vanilla extract
  • Pinch of salt

Method
 

  1. Preheat your oven to 350°F (175°C) and grease a round cake pan.
  2. Arrange the sliced pears in a single layer at the bottom of the pan.
  3. In a saucepan over low heat, melt butter with brown sugar until bubbly; pour over the pears.
  4. In a mixing bowl, whisk flour, baking powder, eggs, vanilla extract, maple syrup, and remaining butter until smooth.
  5. Pour the batter over the pears and spread evenly.
  6. Bake for 30-35 minutes or until golden brown and a toothpick comes out clean. Cool slightly before inverting onto a serving plate.
