  • 4-6 lb bone-in prime rib roast
  • 4 tbsp kosher salt
  • 2 tsp cracked black pepper
  • 2 tsp garlic powder
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp olive oil

Method
 

  1. Pat the prime rib dry with paper towels and place on a wire rack in a baking sheet.
  2. Generously season with kosher salt (about 1 tbsp per pound), followed by cracked black pepper and garlic powder. Rub the spices into the meat.
  3. Sprinkle chopped rosemary over the roast.
  4. Cover loosely with plastic wrap and refrigerate for at least 24 hours.
  5. Preheat your oven to 450°F (230°C).
  6. Roast the prime rib for 15 minutes, then reduce temperature to 325°F (160°C). Cook until desired doneness is reached (approximately two hours for medium-rare). Let rest before slicing.
