- Pat the prime rib dry with paper towels and place on a wire rack in a baking sheet.
- Generously season with kosher salt (about 1 tbsp per pound), followed by cracked black pepper and garlic powder. Rub the spices into the meat.
- Sprinkle chopped rosemary over the roast.
- Cover loosely with plastic wrap and refrigerate for at least 24 hours.
- Preheat your oven to 450°F (230°C).
- Roast the prime rib for 15 minutes, then reduce temperature to 325°F (160°C). Cook until desired doneness is reached (approximately two hours for medium-rare). Let rest before slicing.
